How much should I charge for an educational consulting role? I have a PhD, 12 years of experience

I'm writing a proposal for an educational consulting RFP with a well-known environmental non-profit in NYC. It is a year engagement to design curriculum and train staff, with a cap on the daily rate of around $700. I do not have much consulting experience, but I have 12 years of experience teaching and developing curriculum in higher education as a former assistant professor (I have a PhD and have won teaching awards and am a fairly accomplished researcher). Currently I work as a researcher in a national lab where I facilitate workshops with both colleagues and community stakeholders in addition to core research tasks. I don't really have a frame of reference for rates. I don't want to undersell myself, but recognize the work would be for a nonprofit (so perhaps could aim too high and miss the opportunity). My estimate is for around 180 hours of work necessary to complete tasks outlined in the RFP. What's a good way to determine rates? What would be a ballpark figure for someone with my credentials? Thanks!
